Vitamins are essential nutrients required to maintain body functions such as growth, reproduction, and an optimal health. But did you know that the amount of vitamins available from food depends not only on the quantity provided by the food, but also on the method of food preparation and food storage. Vitamins can be destroyed during storage and in cooking. Therefore, in order to obtain the maximum amount of vitamins from the food that you eat, here are some simple food preservation/storage and cooking tips to follow:

  1. Store fruits and vegetables that have been cut in airtight containers or wrappers, andstore juices that have been opened in closed containers.
  2. Rinse fruits and vegetables before cutting, not after, as it prevents the water soluble vitamins B and C stored in watery compartments of fruits and vegetables to be lost during washing.
  3. Use an oven or steam vegetables in a small amount of water. Add vegetables after water has come to a boil. Avoid high temperatures and long cooking times to prevent vitamin loss during cooking.
  4. Do not throw the broth in which the vegetables have been boiled. Use the broth to prepare soups or gravy as it is full of vitamins leached into water when vegetables are boiled or blanched.
  5. Store milk and milk products in cardboard or plastic containers instead of clear glass bottles/containers to prevent the exposure to ultraviolet light, fluorescent light and irradiation as it destroys the Riboflavin vitamin found in milk and milk products.
  6. Use oven or stovetop instead of microwave to cook meats, fish and milk products as it preserves Vitamin B12 and Thiamin vitamin found in pork.
